Hey, Y'all,
Well, here it is Friday morning and another week is practically gone. Where does it go? Wherever it does go, it is gone forever, except in memories that we keep to remember it by. Yesterday, after breakfast, I got busy, showered and dressed for the day. I left the house and headed to Kroger's to gas up the car (I get it once a month.) My little car holds 11.6 gallons of fuel, and since I am a little old retired school teacher, I don't drive it a lot and so ten gallons of gas does me for at least a month, sometimes longer.
Anyway, I headed on to the library and exchanged my four books for four more, then went to Target and bought a new little Black and Decker Coffee maker. It makes one travel mug of coffee at a time, which is perfect for me. My other coffee maker which made 5 six ounce cups, just quit working. It was on, but the gizmo that makes the water come up through the grounds quit gizmoing, so out it went, courtesy of the trash man. I kept the stainless steel carafe. I can steep tea in it, because it will keep it hot. Aha!
I went on then to Hobby Lobby and got the rest of the items needed for the quilts I am working on (and used a 40% off coupon, which saved a bundle) and then headed back down to LePeep's but didn't have the gravy and biscuits. I had a something that was made of an egg white wrap with chunks of chicken breast, melted cheese and green chilies. I didn't realize it was egg white until I had several bites of it. GAG! I don't like egg whites like that. I opened the wrap and removed the innards, and ate most of those along with the grilled diced potatoes. I left about half of all of it, plus the egg whites.
I came back home and later in the day decided to make something I would enjoy eating. (What is the use of eating if you don't enjoy it?) Just to stay alive? I don't think so.... Anyway, here is the recipe for a really yummy salmon loaf if you like salmon. I created this recipe.
Open can of salmon and drain it. Place in a bowl and add some chopped onion, an egg, half a stack of Ritz crackers that have been crushed to smithereens (that means you crush them up good), about 3/4 cup of shredded Mexican style or Habanero cheese, and a small can of evaporated milk. Mix all the ingredients together. Line a loaf pan with heavy aluminum foil (then you won't have to wash the loaf pan) and spray it with oil spray. Place the salmon mixture into the pan, and cooked at 350 degrees for 40 minutes. Eat hot. To add a little pizazz to my salmon loaf, I sprinkled the top of it with Mrs. Dash's Extra Spicy spice before I baked it.
I baked a sweet potato to go with it, and of course have a lot of the salmon loaf left over for a few more days.

Hello Grammy, enjoy your new coffee maker and you got things done and proper, you inspire me. And your recipe is easy but sounds so delicious. I might try it, I love salmon. When your quilt is ready, will you show it to us?

Hey Ruby, Since Mark drinks coffee now along with me the little coffee maker would be going all the time with us. Glad you found one that fits your needs. I fill up my gas tank 16.0 every week. Oh to the life when I can fill it up once a month like you.
Salmon loaf sounds good and will try it soon.
